Ingredients You'll Need
1 sheet puff pastry, thawed
2 tablespoons olive oil
2 large onions, thinly sliced
1 tablespoon balsamic vinegar
1 teaspoon fresh thyme leaves
4 oz goat cheese, crumbled
1 egg, beaten (for egg wash)
Salt and freshly ground black pepper, to taste
Fresh arugula, for garnish (optional)
Caramelizing the Onions
In a large skillet, heat the olive oil over medium heat.
Add the onions and cook slowly, stirring occasionally, until soft and caramelized, about 25–30 minutes.
In the last 5 minutes of cooking, add balsamic vinegar and thyme, stirring to combine.
Season with salt and pepper.
Assembling the Tarts
Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a lightly floured surface to fit a tart pan or baking sheet.
Cut the pastry into 4 equal squares or circles, depending on your preference.
Spread a thin layer of caramelized onions in the center of each pastry.
Top with crumbled goat cheese.
Baking
Brush the edges of the pastry with the beaten egg for a golden finish.
Place the tarts in the oven and bake for 15–20 minutes, or until the pastry is golden brown and puffed up.
Serving
Remove the tarts from the oven and garnish with fresh arugula, if desired.
Serve warm as an appetizer, brunch dish, or alongside a light salad.
These savory tarts combine the richness of caramelized onions with the tang of goat cheese, wrapped in buttery puff pastry—a simple yet elegant dish.
