Ingredients You'll Need



  • 1 sheet puff pastry, thawed

  • 2 tablespoons olive oil

  • 2 large onions, thinly sliced

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon fresh thyme leaves

  • 4 oz goat cheese, crumbled

  • 1 egg, beaten (for egg wash)

  • Salt and freshly ground black pepper, to taste

  • Fresh arugula, for garnish (optional)


Caramelizing the Onions

  • In a large skillet, heat the olive oil over medium heat.

  • Add the onions and cook slowly, stirring occasionally, until soft and caramelized, about 25–30 minutes.

  • In the last 5 minutes of cooking, add balsamic vinegar and thyme, stirring to combine.

  • Season with salt and pepper.


Assembling the Tarts

  • Preheat your oven to 400°F (200°C).

  • Roll out the puff pastry on a lightly floured surface to fit a tart pan or baking sheet.

  • Cut the pastry into 4 equal squares or circles, depending on your preference.

  • Spread a thin layer of caramelized onions in the center of each pastry.

  • Top with crumbled goat cheese.


Baking

  • Brush the edges of the pastry with the beaten egg for a golden finish.

  • Place the tarts in the oven and bake for 15–20 minutes, or until the pastry is golden brown and puffed up.

  • Remove the tarts from the oven and garnish with fresh arugula, if desired.
