Spiced Cauliflower Steaks

Bold, flavorful, and surprisingly satisfying, these spiced cauliflower steaks are a delicious plant-based centerpiece. Seasoned with a blend of warm spices and roasted to golden perfection, each steak offers a crispy edge and tender bite, making it perfect for a hearty main dish or an eye-catching side.

Ingredients You'll Need
1 large head cauliflower
2 tablespoons olive oil
1 teaspoon ground cumin
½ teaspoon smoked paprika
Salt and black pepper
For the Yogurt Sauce:
1 cup plain Greek yogurt
1 tablespoon lemon juice
1 small garlic clove, grated
2 tablespoons chopped fresh herbs (parsley, cilantro, or dill)
Salt to taste
Preparing the Cauliflower
Preheat oven to 425°F (220°C).
Remove the leaves and stem from the cauliflower and cut into ¾-inch thick steaks.
Place on a baking sheet and brush with olive oil.
Sprinkle with cumin, paprika, salt, and pepper.
Roasting
Roast cauliflower for 25–30 minutes, flipping halfway, until golden and tender.
Making the Sauce
In a small bowl, combine yogurt, lemon juice, garlic, herbs, and salt.
Stir until smooth.
Chill until ready to serve.
Serving
Plate each cauliflower steak with a generous dollop of yogurt sauce and extra herbs.
Serve with warm flatbread or over a bed of couscous for a fuller meal.
