This Chicken Fried Rice is a flavorful, one-pan meal packed with tender chicken, crisp vegetables, and perfectly seasoned rice. Quick, satisfying, and better than takeout, it’s ideal for busy weeknights or meal prep.

Ingredients You'll Need
2 cups cooked rice (day-old preferred)
1 cup cooked chicken, chopped
½ cup frozen peas & carrots
2 eggs
2 tbsp soy sauce
1 tbsp sesame oil or olive oil
2 green onions, chopped
Cook the Fried Rice
Heat oil in a large skillet.
Scramble eggs, then push to the side.
Add veggies and cook for 2 minutes.
Add chicken and rice, stir everything together.
Add soy sauce and green onions.
Cook 5 more minutes.
Serve
Serve hot with extra soy sauce or chili oil.
