The subtle sweetness of roasted sweet potatoes blends perfectly with fragrant sage, making each croquette a warm and comforting treat. Ingredients You'll Need

  • 2 medium sweet potatoes, peeled and cubed

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • 1 tablespoon fresh sage, chopped

  • 1/2 cup breadcrumbs, plus extra for coating

  • 1/4 cup grated Parmesan (optional)

  • 1 egg, beaten

  • Salt and freshly ground black pepper, to taste

  • Olive oil, for frying


Preparing the Sweet Potatoes

  • Boil the sweet potato cubes in salted water until tender, about 12–15 minutes.

  • Drain and mash until smooth.


Making the Croquette Mixture

  • In a skillet, heat olive oil over medium heat.Add the chopped onion and garlic and sauté for 5 minutes, until softened.

  • Stir in the chopped sage and cook for an additional minute.

  • Mix the cooked onion and sage into the mashed sweet potatoes.

  • Add breadcrumbs, Parmesan (if using), and the beaten egg.

  • Season with salt and pepper, and stir until the mixture holds together.


Shaping and Frying the Croquettes

  • Shape the sweet potato mixture into small croquettes or patties.

  • Coat each croquette in breadcrumbs.

  • In a large skillet, heat olive oil over medium heat.

  • Fry the croquettes in batches, turning once, until golden and crispy on both sides (about 3–4 minutes per side).


Serving

  • Serve the croquettes hot, garnished with additional fresh sage if desired.

  • Pair with a simple salad or a drizzle of sour cream for added richness.
